Course Description

Sadly, allergies and intolerance to foods continue to be a significant health issue, both in the UK and internationally. According to the Food Standards Agency around 1 to 2% of adults and 5 to 8% of children in the UK have a food allergy, with up to 1 in 55 children having a peanut allergy. In addition, some people need to avoid certain foods because of a food intolerance.

The Level 3 Award in Food Allergen Management for Caterers is a one-day course, which has been designed to equip those individuals occupying a supervisory position with the knowledge to ensure that their company operates in a safe and efficient manner with regard to the issue of food allergens. The course is suitable for supervisors and middle management and people operating their own business where the potential problems relating to food allergens may be an issue.

The course syllabus includes the following topics:

  • Common allergens and intolerances
  • Legislation
  • Effective management of food ingredients and allergens
  • Procedures relating to the accurate communication of ingredient information from supplier to consumer
  • Hygiene considerations with regard to allergen and ingredient control
  • Procedures relating to the control of communication and cross-contamination of allergenic ingredients
  • Food allergen labelling

Course Duration

The duration of this course is one-day programme.

Assessment Method

Students are required to undertake and successfully complete a learner workbook, which is assessed by the Centre delivering the qualification.

Progression

Students, on successful completion of the course are eligible to progress onto the appropriate Level 3 or Level 4 Award.

Location
